A Beverly Hills mandate to cut water use by 36 percent has hotels and restaurants serving water only upon request, so when Project A.L.S. held a gala for 230 people at the Beverly Hills' Four Seasons on April 30, none of the tables in the ballroom had H2O.
A waiter told THR the dinner honoring Julianna Margulies with special guest Nanci Ryder was the hotel's first event under the mandate, calling it a "challenge: Once one person asks for water, everyone wants a glass at the same time." Water by request didn't end up saving any — just about every person asked for a glass, the server said.
