“Zen Time” for Manuela’s Wes Whitsell is the time he spends cooking. “For people to get nourished by that and enjoy it — that’s everything,” the chef told The Hollywood Reporter.
Whitsell wanted to capitalize on the space available to him. “One idea was to a have a garden, a community, public garden. The goal for me was to be able to grow all of our herbs, and we’re getting to that point right now.”
“Why not have chickens?” he asked, saying it “brings something to the Arts District that no one else has, and to be able to have our own eggs on property is a huge plus as well.”
“If you’re waiting for a table you can go out to the garden, have a drink and see the beautiful herb growing and watch the chickens play.” That doesn’t sound like a bad way to spend a spring evening in L.A.
