The Quick Pitch: High-profile San Diego chef Brian Malarkey (Searsucker) brings his surf-and-turf, happy-go-lucky Herringbone concept to the lobby-level restaurant space at the Mondrian hotel, which long housed Asia de Cuba. The music’s loud, the crowd’s kinetic and the menu’s California dreamin’, featuring nimble crudo preparations offset by crispy duck skin and pork belly terrine, as well as expansively indulgent cuts of beef accompanied by, say, kale croquettes.

The Insider’s Dish: Malarkey judged and mentored on the first season of ABC’s The Taste before being booted for, as he told THR in September, “a bigger-name chef.” At least, he added, it was someone he respected “immensely.” (It was later announced that Marcus Samuelsson had joined the show, which has sagged in its ratings in its second cycle, which began earlier this month.)
